Recipe: Tablet

One of my favourite sweets is tablet. Tablet is an extremely unhealthy, traditional Scottish, sweet which is made from butter, milk, and sugar.

Ingredients



  • 1/2 cup of milk

  • 1/2 cup of water

  • 4 oz of butter

  • 2 lb of granulated sugar

  • 1 large tin of condensed milk

  • Vanilla essence or extract


Method



  1. Put the milk, water, and butter into a thick bottomed pan and heat gently until the butter has melted.

  2. Add the sugar and continue to heat gently until the sugar has melted and then bring to the boil.

  3. Boil the mixture for five minutes (gently stir continuously to prevent the mixture from burning).

  4. Add the condensed milk and boil for 10 to 15 minutes (continuing to stir).  I find the mixture is usually ready between 12 and 13 minutes - but you can boil for a little longer if you prefer a darker colour.

  5. Remove from the heat, add a little of the vanilla, and beat the mixture for approximately five minutes until it thickens.

  6. Pour the mixture out into a greased Swiss-roll tin or baking sheet.

  7. Once set you can turn the tablet out of the tin and break into pieces (you may find it easier to break if you mark the pieces out with a sharp knife before the tablet has fully set).
