One of my favourite sweets is tablet. Tablet is an extremely unhealthy, traditional Scottish, sweet which is made from butter, milk, and sugar.
Ingredients
- 1/2 cup of milk
- 1/2 cup of water
- 4 oz of butter
- 2 lb of granulated sugar
- 1 large tin of condensed milk
- Vanilla essence or extract
Method
- Put the milk, water, and butter into a thick bottomed pan and heat gently until the butter has melted.
- Add the sugar and continue to heat gently until the sugar has melted and then bring to the boil.
- Boil the mixture for five minutes (gently stir continuously to prevent the mixture from burning).
- Add the condensed milk and boil for 10 to 15 minutes (continuing to stir). I find the mixture is usually ready between 12 and 13 minutes - but you can boil for a little longer if you prefer a darker colour.
- Remove from the heat, add a little of the vanilla, and beat the mixture for approximately five minutes until it thickens.
- Pour the mixture out into a greased Swiss-roll tin or baking sheet.
- Once set you can turn the tablet out of the tin and break into pieces (you may find it easier to break if you mark the pieces out with a sharp knife before the tablet has fully set).
